So many great farms and local organic items in the Pierce County area. I think that there is a walmart affect that has been going on with restaurants. Chefs have little time to forage and the season is unpredictable here. New restaurant owners with no experience seem to have this dream of all organic all the time or fresh fresh fresh which is good and very possible if you have the means and the revenue, a talented chef and a good purveyor. I feel like the industry is blindly boycotting the farms on accident by ordering from places like Sysco, FSA, and that is just a couple big wigs who way over price. But I understand that your dry goods are a different story and stuff of that sort. Eggs can be bought out of puyallup, Cheese can be out of Kitsap and Snohomish, Old school butchers are out there and in high demand, Produce puyallup, kitsap and North, East, South, West. Now most of these farms and providers do not deliver which is where the bigger companies are winning. Usually the bigger will buy from the little or import from another country and now you have all the fees for your bill. ha. It's amazing.

I wonder if local restaurants could work with Terra Organics produce home delivery service on a delivery menu and schedule that would benefit local restaurants wanting to utilize regional produce and other food supplies ...
