I came up with a good balance of filipino banana sauce and red chili sauce, brioche and aged cheddar grilled cheese with granny smith apples for tartness. If you all don't know what that is, well its a board that is like a surfboard in concept but weighs about 500lbs and you stand up on it while paddling. I think this is going to be huge here. Its huge in Hawaii. Like people get sponsored to ride these on huge waves and push the sport. Yes, mainly to surf but more so to get away from my life at home. But another huge reason was to discover different culture and lifestyle while i suck down Kona beer in midday on waikiki strip. From silver statues trying to hustle the average joe tourist to the all but pretty tokyo women walking around in striped shirts like they own the world. Wheres the japanese waldo? I learned that you are never to far from the mediocre food you see at home that you were trying to escape. Yes they have Walmart in Hawaii...I mean Oahu...I mean practically in the redlight district of Waikiki. Oh and did I mention the brand new Target with a shining Pizza Hut express. The majority of Waikiki is Japanese, A lot of Japanese. So many my brothers G/F is well Okinawan. I'd imagine I would have the same reaction if I actually were in Japan. But don't be bothered, take advantage of it. Yes the  local grind is good, but its the hole in the wall poke shop with the little old Japanese lady that made it worth the thousand mile flight. P.S. most of it talking to a shaman. As you walk into the poke shop off Kapahulu rd. you can't help but notice the hard work that this veteran Obachan has poured into her business and way of making money. She says only a few words and than your off, steaming rice with cold perfectly seasoned poke. Pulling into Yelm you would not expect a hopping town with any nationality other than white. Sorry to say that because well it's in the middle of no where. I came across a couple Mexican, a couple pizza, and the ever so blah fast food. But low and behold you eventually come across a Japanese restaurant called "Kinja". I know the owner and there family. I walk in and the place was hopping from 6:30- 9:30pm. I had talked to Kim and asked him if it was busy for him and he said "It was crazy the first couple months open." It is good to know that business owners are willing to risk it all to become successful. Now its time for heavier sauces, foie gras and figs. What makes a chef seasonal. If Tacoma were to roll out the red carpet for new cuisine (good food), what will happen to the waterfront? How long do the blue hairs live and why are we killing the experience with crap food, old food, old ways, old stereotypes and old assumptions that "If it worked than , than it will work now." Someone started that trend before, and before that was a trend. Right? Yes. It's time for young and innovative chefs to step up. Read the reviews...."Food was average, food was bad, food was great but service bad, and so on.." So what we live in the Northwest, Koreans still own Sushi restaurants and Herfy's Burgers. I think that there is a walmart affect that has been going on with restaurants. Chefs have little time to forage and the season is unpredictable here. New restaurant owners with no experience seem to have this dream of all organic all the time or fresh fresh fresh which is good and very possible if you have the means and the revenue, a talented chef and a good purveyor. I feel like the industry is blindly boycotting the farms on accident by ordering from places like Sysco, FSA, and that is just a couple big wigs who way over price. But I understand that your dry goods are a different story and stuff of that sort. Eggs can be bought out of puyallup, Cheese can be out of Kitsap and Snohomish, Old school butchers are out there and in high demand, Produce puyallup, kitsap and North, East, South, West. Now most of these farms and providers do not deliver which is where the bigger companies are winning. Usually the bigger will buy from the little or import from another country and now you have all the fees for your bill. ha.
